WHOLE SMOKED MEATS MENU
We will gladly custom smoke whole pork shoulders, rib racks of 6 racks or more, and whole chickens per client request. We require no less than 24 hours advance notice. We charge raw weight market cost at the time of purchase from our purveyor for both, pork and chicken. Rib Rack Six Packs are sold at regular menu pricing with a discount per 6-pack. Smoked meats are presented whole. If you would like your pork pulled or chicken deboned and pulled, there is an additioanl batch charge. *A Non-Reundable 50% Advance Deposit Required

Whole Smoked Pork Shoulder

Whole Pork Shoulder AKA ‘Butt’: Standard raw weights range from 5 to 12 pounds. Please allow for 50% shrinkage during cooking when assessing how much smoked pork you will need. A 10 pound shoulder/butt, will yield approximately 5 pounds of smoked meat. A standard serving is 4oz per person, small eaters. 8oz per person, big eaters. There are 16 ounces in 1 pound. Large volume can be accommodated upon request.

Whole Smoked Chickens

Whole Smoked Chickens: Standard raw chicken weights range from 31/2  to 5 pounds. Please allow for 25% shrinkage during cooking when assessing how much smoked meat you will need. A 4 pound chicken will yield approximately 3 pounds of meat. A standard serving is 4oz per person, small eaters. 8oz per person, big eaters. There are 16 ounces in 1 pound. Large volume can be accommodated upon request.

DUB Six-Pack Rib Racks: Standard raw rib rack weights range from 4 to 5 pounds. Please allow for 40% shrinkage during cooking when assessing how much smoked meat you will need. One rib rack will feed approximately 3-4 people at 3 to 4 bones per person. A standard serving is 3-4 bones per person, small eaters. 4-5 bones per person, big eaters. There are approximately 12 bones per rack. Large volume can be accommodated upon request.
